President Donald Trump last week invoked the Defense Production Act to order meatpacking plants to stay open, though they have experienced some of our most severe COVID-19 outbreaks. The news came mere weeks after Smithfield Foods closed one of the country’s largest pork processing plants after 238 workers there were infected. To date, at least 48 meat processing plants have had recorded instances of the disease spreading in their facilities.
